1 pound yellow tomatoes or yellow cherry tomatoes chopped 1 large shallot finely minced 1 large clove garlic finely minced 2 tablespoons champagne vinegar or white wine vinegar 2 Serrano chilies seeded and minced 2 teaspoons fresh lime juice 1tablespoon pure maple syrup salt to taste.
In a bowl combine the tomatoes and their juices the shallot garlic cilantro vinegar chiles lime juice and maple syrup if the tomatoes are not sweet enough season the taste with salt mix well cover and refrigerate for at least 2 hours or until very cold.
