Tortilla chips

Corn or flour tortillas oil for deep frying
• special equipment: deep fry thermometer
1) cut the tortillas into quarters or sixths depending upon the size you want
2)heat the oil in a deep fat fryer or deep skillet to 325 degrees F. add the tortilla pieces a few at time and fry stirring continuously for 3 minutes or until crisp using a slotted spoon remove the chips from the oil. And drain on paper towels.
