2 cups good quality white wine vinegar 2 green chilies halved lengthwise 1 small dried red chilies 1 clove garlic.
To make this vinegar select a dried red Chile whit the amount of “heat” you prefer there is no need to remove the seeds from the chilies unless you want to. Likewise there is no need to remove the chilies from the vinegar after they have soaked in it.
Combine all the ingredients in a glass jar with a tight fitting lid let sit in a cool dark place for 1 week before using store in the refrigerator for up to 6 months.
