Achiote paste

1 tablespoon achiote seeds 1 tablespoon black peppercorns 1 teaspoon dried oregano 4 whole cloves ½ teaspoon cumin seeds 1 inch piece of cinnamon stick 1 teaspoon coriander seeds 1 teaspoon salt 5 cloves garlic minced 2 tablespoon cider vinegar 1 ½ teaspoons all purpose flour.
1) assemble the mise en place trays for this recipe
2) put the achiote peppercorns oregano cloves cumin cinnamon and coriander into an electric coffee grinder spice grinder or mini food processor and process until fine transfer to a small bowl and stir in the salt
3) place the garlic in another small bowl and sprinkle with 2 teaspoons of the ground spices using the back of the spoon mash the garlic and spice mixture into a smooth paste blend in the vinegar and flour scrape into a glass or ceramic container with a lid let stand at room temperature for several hours or overnight before using store tightly covered in the refrigerator for up to 3 months.
